Smell: faint agave, salt, some spice?, honestly just smells like tequila. Snifter: vegetal taste that leaves an almost woody finish, pepper, the agave taste is more in the background, some dirt/earthy notes. On ice: starts with agave which blends with a cinnamon taste, then moves to earthy notes, and finishes with a vegetal character. A really wonderful progression of flavor when served on ice. Verdict: Try It. This isn't your typical tequila, and there's nothing wrong with that, but fans of tequila should definitely sample this cousin of tequila as it still retains agave notes while embracing more vegetal and earthy flavors that tequila only hints at.

About this bottle
Sotol is distinct from tequila and not derived from agave. This spirit originates from a plant similar to agave, known as dasylirion wheeler or desert spoon, which is gathered in the wild. After cooking, the plant material undergoes fermentation with Champagne yeast. This reposado sotol is matured for six months in new French oak and is USDA certified organic.

Earthy, vegetal notes with a smoky finish. You can vividly imagine the scent of roasting piñas while relaxing in the sun. A distinctively pleasing flavor.
The aroma is difficult to distinguish from tequila, but I do detect brown sugar notes. On the tongue, it's sweet with hints of vanilla and brown sugar.
Quite good. I believe I favored desert door slightly more, but this is still very enjoyable. I am curious to try the añejo variety for more depth.
A mild aroma, quite pleasant with very little sharpness.
