About this bottle

Inspired by the region's native coyotes, these sotols are produced from wild agaves that are manually harvested after maturing for up to 15 years in their natural environment. The plants are subsequently cooked in subterranean clay ovens, hand-ground, and distilled using a homemade copper pot-still. No colorants or additives are employed at any stage of the production.

This was my top pick from the tasting. It possesses a lot of depth. Tastes of earth with a touch of sweetness. A subtle smokiness appears right at the finish.
