This is my initial experience with sotol, though I've grown accustomed to it after finishing the first fifth of the bottle. It was a somewhat spontaneous purchase while searching for mezcal (largely due to high ratings!). Upon nosing, a sharp scent of mesquite smoke is present. Chalk, lime zest, and possibly yucca. It has a slightly medicinal, antiseptic quality. It's clean and dry. It has a medium-high viscosity. The flavors hit intensely at first before they start to transform. The palate is sharp, characteristic of unaged spirits, but without any harshness—just a stimulating vibrancy. The experience begins with that same clean, dry smoke (not oily) followed by a brief sweetness akin to simple syrup. Then, a powerful vegetal, coppery taste puckers the entire mouth, with bitter citrus oils drying the cheeks. This sensation persists for several minutes, slowly diminishing while introducing a limestone minerality. An unusual, unsalted meatiness emerges—less like the chewy ham found in some Scotches, and more like chicken. Perhaps it evokes alligator or rattlesnake. It resembles something cooked in unseasoned cast iron, where the metallic essence infuses the food. The mouth waters continuously due to the tanginess and minerality, compelling another sip. This is a remarkably challenging and intriguing pour. More so than virtually any other spirit I've encountered, it powerfully conveys a sense of place—not merely a sensory event, but something profound. This spirit virtually transports you to the Mexican desert and feels entirely out of sync with my current midwestern winter setting. I can vividly picture and feel myself in the high desert, the day's perspiration dried into my dusty attire, surrounded only by nature, the sky, and profound solitude stretching for miles. This feeling is quite authentic. Cheers, everyone. If you haven't tried it, give it a go... it certainly won't appeal to all, and maybe not even to me. I'm simultaneously captivated and apprehensive about this spirit.

About this bottle
Produced at a sixth-generation distillery situated in the Sierra Madre Mountains of Chihuahua, Mexico, Por Siempre is made from the wild-harvested native desert spoon plant, known locally as "Sotol." The sotol piñas are roasted for 3-4 days in a pit lined with volcanic rock. They are then manually crushed and undergo open-air fermentation for 4-8 days. Distillation involves a pot still, initially heated by fire and then by gas for the second distillation. It is distilled to an alcohol by volume of 60-80% and then reduced to proof. Prior to bottling unfiltered, it rests for 60 days.

This is a spirit I'd only suggest trying if you're dedicated to experiencing the extremely unique and unconventional. I'm halfway through my bottle and remain undecided on whether I 'enjoy' it. It's an EXPERIENCE! I've only had it neat and chilled. Perhaps it excels in a cocktail. The powerful notes of damp hay, grass, and clay-like rocks are so dominant they transport you elsewhere more than any other spirit I've encountered. That place is the desert. Try closing your eyes, taking a sip, and see if it happens for you. For perspective, my ex-girlfriend found it to be the worst thing she's ever tasted;). Mezcal and Scotch seem mild in comparison. The aftertaste and lingering flavors persist for a good 10-15 minutes. I don't regret purchasing it. It has definitely broadened my understanding of spirits positively.
The aroma has earth and citrus notes, with a trace of wet cement. The palate is like a sharp hit of sweet lime, followed by less intense earth and minerality. The finish is earthy minerality with a whisper of smoke. An outstanding spirit, definitely worth the $50 I spent. There's a peculiar note (I can't find a better word) throughout, but it's not unpleasant. I'd strongly suggest this to anyone, especially if they desire something sweet yet distinctive and different.
Incredible and very distinct flavor intensity. The taste is dominated by hay, fertile soil, and river rocks, with a touch of funk and a mineral finish. Hints of pineapple and dry smoke appeared at times. Its richness and complexity are impressive, but I can't see myself finishing a whole bottle; it's a bit overwhelming for my preference.

Flavor: Sweet, mellow, earthy, smoky, with hints of cocoa. It's remarkably smooth and not sharp. Easy on the palate, yet full of character. Deceptively easy to drink straight.
I could drink this forever! I highly recommend it if you like sipping tequila or mezcal! The tasting notes on the professional review are spot on. I did detect some papaya skin notes in the aroma and palate.
