Sotol Coyote Blanco Durango, a spirit from northern Mexico less commonly known than mezcal, adheres to traditional methods. The Coyote range showcases wild, organic sotol plants, also known as Dasylirion wheeleri or desert spoon. The hearts of these plants are carefully baked in an autoclave rather than smoked, preserving the plant's delicate character. Due to the arid climate, the plants develop concentrated sugars, resulting in a spirit with a perceived sweetness. This unaged expression emphasizes the purity of the production process.

My first time trying sotol. It's somewhat similar to a sweeter, smoother mezcal, but without the agave taste, possessing a much thicker texture and an herbal quality I'm struggling to define. Quite interesting! And it's nice to sip.
Silky and delightful. You absolutely have to try this.
