About this bottle

Sotol, a spirit and plant native to Chihuahua within its own denomination of origin, is the base for Ocho Cientos Sotol Blanco. This plant, a relative of agave, is smaller and yields less, approximately a quarter of typical agave fields. Its fibrous nature necessitates chopping rather than pressing, unlike agave. At Hacienda de Chihuahua, the sotol is roasted and steamed, then double-distilled in small copper stills, with the blanco bottling occurring unaged.

For some reason, I always feel confident about bottles featuring roosters. I will have to try this someday.
