Herbal and fresh grassy nose, earthy, spicy sotol, black pepper, green bell pepper, mint, anise and a hint of smoke. Sweet, peppery, green and smooth on the palate, with abundant green herbs, arugula, black pepper, mint. The sweetness is hard to pin down. It's sweet like vanilla or caramel, but also green and vegetal. I'll just label it sweet sotol. The finish is long and peppery with a late spicy kick.
