It's made with water from the El Pandillo ranch, fermented in wood and stainless-steel tanks, then twice distilled in copper before bottling at 43% alcohol. The aroma presents notes of agave, damp earth, citrus, blossoms, and spices; the taste is herbal with cooked agave, orange, celery, olive, anise, basil, dill, and peppermint; leading to a lengthy, mineral-driven finish with hints of black pepper, almond, and limestone.
