About this bottle
Jesús María, a town in the highlands, stands as the highest point in tequila agave cultivation areas. El Pandillo Distillery, situated amidst these fields, is recognized as one of the most progressive and environmentally conscious tequila producers. Master distiller Felipe Camarena creates this Highland-style tequila using stressed hillside agave plants, slow-roasted in brick ovens. The agave is then macerated whole with fiber, imparting a strong agave character. This is followed by dilution with a mixture of 50% captured rainwater and 50% high-mineral spring water. It contains no additives.

The aroma is unexpectedly sweet, with hints of vanilla bean, charred marshmallows, agave syrup, and a trace of charcoal. It has a robust, slightly oily texture. The palate echoes the aroma with more vanilla bean and agave syrup, plus lemon zest, roasted nopal cactus, damp earth, and seawater. The finish is long, warm, and satisfying, offering pleasant peppery and minty qualities that, along with more vanilla and a whisper of rose water, make you want another sip. Overall, this tequila is a bit too straightforward and sweeter than I prefer, but it's remarkably easy to drink, and the finish is delightfully surprising.

Recently sampled this from a frequently opened bottle next to the G4 Blanco at a bar. This is the finest G4 Blanco I've ever encountered -- it possesses all the intense caraway and anise seed characteristics of an aquavit. However, the ArteNOM 1579 Blanco was vastly superior to the G4. No comparison.
Visually crystal clear, with aromas of rainwater, cement, lime zest, musk, old leather, and chalk. The texture is creamy and oily, with flavors of coconut flesh, vanilla, celery, agave syrup, and menthol. I can't imagine a better Blanco.

An unaged Agave Spirit from NOM 1579.
It presents an aromatic opening with hints of agave, damp earth, citrus, florals, herbs, and spices; followed by an herbal character adding notes of cooked agave, orange, celery, olive, anise, basil, dill, and peppermint; leading to a prolonged, mineral-rich finish with hints of black pepper, almond, and limestone.

The quality is undeniable. Aromas of celery, cement, white pepper, agave, and poblano are present. It's viscous, dense, and has a subtle chewiness, yet finishes cleanly with pleasant peppery, white paper notes. Outstanding.

My favorite blanco to date. Intense flavors, smoother than Cincoro. REVISED: After finishing half the bottle, I'm lowering my rating to 4.5. Still excellent. However, I do prefer Cincoro.
