This is an intense Raicilla from a high-altitude village in Jalisco. The agave varietals are slow-roasted in an underground oven and twice distilled in a traditional still. It has a dusty, earthy opening with notes of herbs and game, while a smoky character leads to a medium-length dry and bitter end. April 2017

About this bottle
This spirit is distinct from typical Mezcal and is not classified as such. It is twice distilled in an "ancestral" clay still and produced using traditional methods maintained for centuries. Its origin in Jalisco differentiates it; while the region is renowned for tequila, agave spirits made there cannot legally be labeled as mezcal. Furthermore, this raicilla is made from the Agave Angustifolia (Criolla), a variety of espadín found almost exclusively in this part of Jalisco.

It's quite similar to the green version but lacks its complexity. It still presents a strong funk on the nose, followed by a sweet vegetal middle, and finishes with an almost chalky clay sensation.
Smells like tequila. A funky character emerges on the tongue and in the aftertaste. Perhaps hints of aged cheese. Enjoyable.
Aroma: pungent cheese. Taste: unripe peppers, uncooked vegetables, light peppery notes. Smokiness: moderate.
A friend noted a mothball finish.
