The aroma has a faint scent of pine with a distinct lactic/cheesy funk, though apparently not everyone detects the cheese. On the palate, there are notes of anise, goat cheese, tea, and sour apple, with a moderately long earthy finish. It's not my favorite, but it's so intriguing that it makes me want to explore more raicillas.

About this bottle
Originating from Mascota, a small town in Jalisco, the heartland of tequila, this raicilla embodies an old-school approach. It undergoes a single distillation in a homemade pot-still constructed from salvaged materials. For clarity, it is distilled once, with a portion set aside for a second distillation, which is then combined with the initial distillate to enhance depth, body, and proof. Unlike typical Oaxacan mezcal, the agave here is roasted in an above-ground adobe oven. The heavily charred sections are scraped away post-roasting, resulting in a cleaner, nearly smokeless profile.

Sweet, like a green apple. Almost no smoke. I couldn't quite identify the second flavor. Maybe plantains? It would be enjoyable in a mezcal old fashioned. It was my second favorite in a tasting flight.
Either the folks rating this low on sweetness are mistaken, or I am. It has a lot of fruit flavors – green apple, raisins, orange. The smoke level is low.
Sweet aroma, slick texture, with notes of pepper and anise. The smoke is light and almost ethereal, present but fading fast.
An aroma of rubbing alcohol, with a taste that I found difficult to pinpoint, somewhere between gritty and ripe fruit.
