Sybil Hill 3.5

I may have sampled cognac once or twice before, but it didn't leave a strong impression then. This will be my first review. The aroma brings to mind fermented apple cider, grape skin, white wine, and acetone. The palate is more enjoyable, with apple and pear at the forefront. Christmas spices like clove, ginger, nutmeg, and perhaps a touch of vanilla round out the flavors. I don't perceive added sugar, which I understand is common in cognac. It has a slight sweetness, but it doesn't taste artificial. The higher ABV of 51.3% is appreciated compared to the typical 40% minimum. While I wouldn't be able to rate this against other cognacs, based on my enjoyment as a primarily whiskey drinker, I would assign it a 3.25.
