A refined, single estate 2005 vintage Cognac from Hine, using grapes solely from their Grande Champagne vineyards. It opens with notes of orange peels, ginger, and liquorice allsorts. This evolves into anise, fennel seeds, and cumin, with some HobNob biscuits also present. The palate reveals jam, honey, raisin, grape, and pineapple, balanced by clove and Oriental spices. Hints of cumin, mandarin, pineapple, and Turkish delight emerge. The finish is long, smooth, and drying, with notes of dark chocolate, vanilla, and caramel red apple. September 2017 / January 2019
