A trip to see the folks at Fanny Bay distillery is truly wonderful! We had the chance to sample their unaged whiskey, and it was impressive! It's strong but so mellow and delicious, you would guess it was aged and much weaker. Your nose detects notes of baked apple and dried grapes with vanilla cream, plus a hint of cinnamon, cloves, and nutmeg. As it airs, it becomes fruit and cream with eucalyptus and mint. Your tongue detects a good balance of heat and sugar, with spices and white pepper. This is simply superb for a new make! Even though Fanny's Bay is a small operation and the owner manages everything, it's a great time to witness his custom stills and their amazing selection. If you are in Tasmania, visit them!
