Brazilian Jequitibá (Cariniana estrellensis): White Jequitibá imparts nearly unnoticeable flavors and aromas and a very slight color change. Pink Jequitibá imparts a slightly yellowish color, aromas, and pleasant flavors with a complex bouquet comparable to American oak. It smooths the "harshness" of new cachaças without altering its other qualities. It removes the slight taste of sugarcane pulp, without changing the color.
