About this bottle

Novo Fogo cachaça begins with estate-grown, certified-organic sugarcane, harvested and crushed within 24 hours, then fermented for a maximum of 18 hours. The Tanager expression is aged initially for one year in Four Roses bourbon barrels that have been disassembled, sanded, and lightly re-toasted. It then receives a finishing period of 2 to 3 months in arariba (Brazilian zebra-wood), which provides its red hue.

Nose of cranberry and blackberry juice. Tastes like Mike and Ike candies. Blackberry and cherry syrup. It takes a moment for the base spirit to emerge, but it appears in the finish. More of an intriguing experience than a typical cachaça to consume.
