An assertive Agave Spirit from mezcalero Fernando Santibanez NOM-F193D in Santiago Matatlan, crafted with Espadin following his grandmother's original recipe. It's made by cooking the agave in a conical stone oven using mesquite & ocote wood. The cooked agave is crushed with a tahona and naturally fermented in an open pine vat. It's then double distilled in a copper alembic, filtered, blended, and bottled at 51% ABV. It begins with an aromatic opening of herbs & spices, fruits & vegetables; proceeds to a rich & bold middle with agave, jackfruit, vanilla icing; and concludes with a long finish of steel, tar & rubber smoke.
