About this bottle

This mezcal is produced using an antiquated technique: small clay stills. This ancient method is typically reserved for small home distilleries due to the fragility of the clay pots, which require frequent replacement, and the high production costs. Notably, the clay for these stills comes from the distillery's own estate. It is bottled at 94 proof, considerably higher than their standard Plata expression, which is 80 proof.

On the nose, expect green bell peppers, a damp mineral quality reminiscent of a limestone cavern, and the smell of a smoldering campfire after a light shower. The texture is warm and slightly viscous. The taste features a superb earthy sweetness, with elements of green bell pepper, deeply scorched marshmallows, bay leaf, black pepper, subtle orange zest and lime peel, and a mild smoky character. The finish is extended and mineral-driven, with persistent black pepper, citrus notes, and a trace of smoke. Generally, it feels exceptionally light and revitalizing. I can imagine this being an everyday drink, particularly on warm evenings (or daytime).

The aroma carries a pleasant musty, smoky/peaty scent. The flavor profile is quite intense, featuring sweetness, significant woodiness, and plenty of smoke. The finish leaves a pleasing musty/decaying wood impression. My favorite aspect of this drink is the silky smooth, almost buttery, soft yet substantial mouthfeel. The pleasing smoked agave essence lingers long after the burn fades. Rated 4.15.
