The aroma of this gin, produced here in Wisconsin at a prominent winery and distillery, is notably sweet... almost surprisingly so. It possesses a delicate floral quality, along with hints of herbs and blackberries. The palate is light, clean, and slightly sweet... but instead of transporting me to a Wisconsin garden, I find myself in Istanbul, enjoying raki at a waterfront tea house near Seraglio Point. There's a distinct licorice-like anise note, accompanied by spring flowers, basil, and pepper. A very enjoyable gin, possibly best served simply over ice with a splash of soda; tonic or vermouth might overpower the spirit's more subtle characteristics.

A lingering taste like licking a 2x4. Dry wood. I had higher expectations given the impressive history of Wollersheim.
