A delicate Agave Spirit from Unito Distillery in Santiago Matatlan, Oaxaca, Mexico, made with 8-11 year old Espadín agave. It was slow-cooked in stone ovens, crushed with a traditional stone mill, fermented in pine vats, and double distilled in copper stills before bottling at 40% ABV. It offers an aromatic beginning with notes of agave, earth, fruits, and spices. Its delicate character provides hints of fresh agave and citrus, leading to a quick, balanced finish with a touch of mesquite smoke.
