A delicate agave spirit from Unito Distillery in Santiago Matatlan, Oaxaca, Mexico. Made with 8-11 year old Espadín agave, slow-cooked in stone ovens, crushed with a stone mill, fermented in pine vats, and double distilled in copper stills, bottled at 40% ABV. It has an aromatic start with notes of agave, earth, fruits, herbs, and spices. A delicate middle adds hints of fresh agave and citrus, leading to a quick, balanced finish with a touch of mesquite smoke.
