[Barrel: D54 / Bottle: 187] This is a potent Agave Spirit from El Mayor Distillery in Jalisco (Los Altos Southern), Mexico. It's made using an autoclave, fermented in stainless steel, double distilled in a stainless pot with a copper coil, and then aged in white oak barrels for up to 9 months before bottling at 40% ABV. It starts with aromas of agave, tropical fruits, wood, earth & spice. The bold mid-palate brings notes of agave, oak, vanilla & citrus, leading to a complex, medium-length finish with notes of pepper, butterscotch & cinnamon. January 2023
