Master Distiller Gilberto Jasso crafts PaQuí Tequila in Jalisco, Mexico, for founder John Chappell's Tequila Holdings. The production emphasizes using agave piñas with a sugar content of 26 brix, harvested after maturing for at least seven years. Fermentation occurs in stainless steel tanks with fresh wine yeast. The name PaQuí means "to be happy" in Nahuatl, an Aztec language.
