About this bottle
Montelobos Tobalá Mezcal Joven utilizes sustainably cultivated agave potatorum (Tobalá), a departure from the typical use of wild agave. These agaves were grown from seed in Puebla for up to 15 years before harvesting. They were roasted for 5-7 days in an in-ground, brick-lined earth oven. Following a ten-day fermentation, the resulting juice was twice distilled in copper stills heated by wood fire.
