About this bottle

This unaged mezcal originates from a new Denomination of Origin in Puebla, Mexico. Master Mezcalier Aurelio Gonzalez Tobon prepares hearts from 12-18 year-old wild papalote (cupreata) agave, which are roasted in an underground pit oven. Open-air fermentation with natural yeasts precedes distillation to proof in a reflux-style alembic still.

This is likely the best mezcal I've tasted so far. The best part was they didn't have enough for a full serving and gave it to me at no cost. There's a distinct and pleasing umami taste that isn't too strong. There are some subtle floral hints and a nice vegetal sweetness. Smoke isn't the main flavor and it stays very slightly in the background.

Of the seven Del Maguey expressions sampled, this one stands out the most. It impressed from the moment it was poured. The aroma carries a hint of Raicilla funk alongside fruity notes. It offers cotton candy and sweet fruits, concluding with a pleasant warmth and a subtle smokiness. This is excellent stuff!

Subtle notes of smoked vegetables; the smoke is present but delicate. Fruity and grassy. This was the best of the group. And that's why a certain individual is in charge. #6 in team blind tasting

A pleasant mezcal with hints of cooked agave, anise, stone fruit, bananas, pineapples, plantains, cinnamon, dark chocolate, pepper, lavender, wildflowers, and smoke.

Very intricate on the nose and palate. Nose: tart candy, chalk, baby food. No burn initially, only on the finish. Palate: tart candy, mineral, vegetal.

Dominick Amos 4.5

Smooth at first, then a bit more intense at the end. Buttery, sweet corn in the middle with a sour hint. One of my favorites yet.
