El Jolgorio Pechuga mezcal is made from Espadin agave that has reached ten years of maturity. The agaves are cooked in pits, crushed with a tahona, fermented openly, and then double-distilled by mezcaleros Valentín Cortes and Gregorio Martinez Jarquin in Santiago Matatlán, Oaxaca. The distillation process also includes various fruits and a rooster's turkey breast.

After spending some days in Oaxaca City, I obviously sampled numerous mezcals. Of the approximately 25 tasted there, plus at least 10 more during my travels across Mexico, this one remained my top pick for a mezcal that isn't wildly unexpected or unusual (unlike certain tepeztate mezcals). I was impressed by how balanced yet intricate this spirit was, with nothing detracting from the enjoyment of each sip.
My first Pechuga. I've wanted to experience this unique mezcal variety for a while, and I believe this one might have set the standard for me. It has a wonderful spicy sweet aroma, with complex fruity sweet smoke on the palate. A slight warmth remains, leaving a long-lasting, almost earthy flavor. Love it.
It's not as viscous as other pechugas I've had, but it still coats the mouth. Very prominent, unusual flavors with some herbal notes. It's somewhat dry with a long finish.
Mmm, quite enjoyable. Paired exceptionally well with the poblano crema served with one of our meals. This is worth seeking out.
Tasted with a friend: Distinctly smoked paprika. Extremely dry. I've genuinely never encountered anything like it.
One of my preferred pechuga mezcals. Excellent flavor, remarkably smooth, very vibrant. Minty with a slight brininess.
