About this bottle
Puebla, Mexico is the origin of this Ensamble Mezcal, made from 100% cultivated agave using papalote, espadín, and tobalá varieties. It is produced artisanally, with agave cooked in underground brick pits using Encino and Tepeguaje wood. Wild fermentation occurs in open pine vats, followed by direct firewood-heated copper still distillation.

Tequila/Mezcal tasting evening. My palate isn't sophisticated enough to discern specific notes beyond vanilla, caramel, oak, and agave. Also, the setting wasn't conducive to deep analysis, so I'm rating based on enjoyment. An excellent Mezcal, one of the best I've tried in my limited experience with this spirit.
