An elegant, handcrafted Agave Spirit produced by distiller Manuel Benet and mezcalero Eric Hernandez for Destilería Sacrificio NOM-O158X in Tlacolula, Oaxaca, Mexico. It consists of Espadin aged for at least 10 years; roasted with mesquite and ocote pine; followed by natural fermentation and double-distillation. The first distillation is in steel, and the second is in copper. It starts with an aromatic profile of smoke, vegetals, and fruits; its crisp mid-palate offers notes of agave, citrus, mint, and campfire; leading to a balanced, medium-length finish with a touch of pepper. About this bottle
Mezcal Sacrificio Joven originates from Tlacolula, Oaxaca. It is produced using the hearts, or "piñas," of espadín agave plants aged 8 to 10 years. For two days, these agave hearts are roasted in ovens heated by mesquite and ocote pine wood. Traditional methods are used to extract the juice, which is then fermented and subjected to a double distillation in a steel still followed by a copper still. The mezcal is aged for 30 days in stainless steel tanks before bottling at 40% ABV.

This mezcal strikes me as "fresh," which is fitting for a "joven." It presents a mild smoky character with a touch of sweetness initially. I liked sipping it neat, and it also performed admirably in mezcal margaritas, which were superb. You get a solid, high-quality mezcal without breaking the bank.
Something of our introduction to mezcal. Agave, somewhat fruity and smoky, with a hint of spice on the finish.
