About this bottle

This spirit is made from Salmiana agave cultivated wild on the Central Mexican Plateau in San Luis Potosí. The agave is prepared in above-ground ovens, known as hornos, rather than wood-fired stoves, resulting in a lack of smokiness. It is crushed using a tahona, fermented with indigenous yeast, and twice distilled in small copper pot stills. The bottling strength is 43.5% ABV.

Dusty Tracy 4.0

The aroma is very "green," reminiscent of jalapeño or poblano peppers, with hints of cheese and perhaps a touch of onion. It essentially smells like jalapeño poppers in a glass. The taste follows suit with a peppery spice kick. The green pepper notes linger on your palate indefinitely. I'm still tasting it 30 minutes later. In summary, it's a robust and distinct mezcal that checks many excellent boxes and is an incredible value. I only wish it had a higher ABV, which I suspect would unlock more complexity. A recent experience with a Mezonte Jalisco Raicilla offered many similar flavors but with significantly more depth and intricacy, which was astounding.

Aroma: jalapeño! Prominent green peppers, fresh, a hint of molasses (tropical fruit) and menthol, fresh manure. Taste: Jalapeño is again pronounced, with a chili sensation and green pepper flavor. A hint of caraway sweetness at the end. It's herbaceous and not as dry as others. Finish: Very Mexican, a bit of smoke, green pepper again. Fajita. Peach

Presents with green chili, star anise, a faint smokiness, and soil notes, culminating in salty Parmigiano Reggiano. It's smooth and concludes with a firm finish.
