From Rosaluna Distillery NOM-O02X in Santiago Matatlán, Oaxaca, Mexico, this Espadin agave liqueur was hand-harvested after eight years, then roasted underground, milled, fermented, and double-distilled. It starts with a fruity profile of citrus, tropical fruit, pineapple, and pear. The body is rich and spicy with notes of roasted agave, caramel, spice, ginger, and cinnamon, leading to a lengthy, bold, and silky finish with hints of smoke and earth. August / September 2021
