This dram was a pleasant surprise. It possesses qualities reminiscent of Scotch. Very easy to drink, smooth, and non-chill filtered. Vanilla is apparent on the nose, leading to a very satisfying sipping experience. The spirit is understandably quite young, with subtle background notes of caramel and burnt oranges. A bit more aging and intensity would elevate this to Australia's premier general release, outside of single-cask/small-batch offerings. Cons: The price is too high, and it needs more maturation time.

About this bottle
The Great Southern Distilling Company in Albany, Western Australia, has been producing the region's first single malt, Limeburners, since 2005. The Margaret River Distilling Company has also been involved since November 2015. Limeburners Infinity Solera Cask underwent an 8-year maturation utilizing a solera system with 500-liter puncheons that previously held port wine. It is presented at 43% ABV.

This is a fine enough spirit, and at $150 it ought to be. But at least half of that price seems to be in the cost of the solera system and its related promotion. Somewhat similar to Japanese spirits like Nikka in its well-balanced chocolate and caramel notes, it's certainly a quality drink... but about twice as expensive as similar quality products.
The aroma is closed upon opening/pouring. It shows spice and fruit from the Port wood on the palate. Vanilla is present from American used bourbon and port. The aroma opens up with a few drops of water. Complex, subtle. Smooth finish (not 'hot'); one of my regular choices.
I wish I had another half star for this one. It offers fruit and spice with an excellent finish.
