Superior to Glenfiddich 15's cider notes; it's crisp like Crown Apple. This one, when allowed to sit, is subtle. Better than any cider I've had, as this lacks sourness, sugar, fizz, or excessive sweetness. This is a brandy that resembles rum, a rum that feels like fine cognac yet surpasses the cognac I've tried (Hennessey XO). It's almost like a VSOP champagne bubbly but far more intricate. Pairs well with dry-aged duck and steak; it has an aroma reminiscent of protein that's been seared, sealed, and aged for an extended period. It smells like a damp cellar where barrels are stored, and apples naturally decompose; if I were to leave an apple under my bed today, it might smell exactly like this in a few months. It's decayed and aged. I'm very fond of this one. Calvados offers excellent brandy.
