The Calvados here is produced using only apples, despite pears being permitted. New barrels are not used for aging; after its third year of maturation, the Calvados is transferred to large wooden vats that are filled only to two-thirds or three-fourths of their capacity.

A rich aroma of cider and apple skins, simple yet very fresh. Features tart apples, cedar, a juicy texture, and a light touch of kitchen spices. A well-executed, straightforward Brandy. Well done!
