Lark Classic Cask Strength

Aroma: Sun-dried apricots and figs, citrus oil, vanilla, butterscotch, and cinnamon. Taste: The initial impression is robust and assertive, yet not aggressive. It's filled with malt, preserved fruits, and mild oak tannins. As it evolved, I detected chocolate, butterscotch, vanilla, honey sweetness, and some warming spice. Despite some aging in ex-port barrels, I didn't notice a wine-like character; instead, the casks seem to enhance the sweetness and richness of the palate. The texture is smooth and full-bodied. Finish: Medium to Long. Sweet malt and honey-soaked preserved fruits. Similar to the Classic Cask, there's a subtle smokiness in the finish. The aroma and taste of this whisky closely resemble those of Lark Classic Cask, but everything is amplified significantly in this version. The higher alcohol content elevates this spirit to a new level, not just in intensity but also in the depth and variety of its scent and flavor. However, it remains a relatively uncomplicated whisky, lacking the intricate complexity found in similarly priced Scottish single malts. This doesn't make it inferior, but it is a distinct style. When Lark was under Bill Lark's ownership, they produced a cask-strength whisky simply named Lark Cask Strength. This new iteration, made at the Pontville distillery by the current owners, is similar and clearly based on the earlier product, also at 58% ABV, but it's not identical. The original cask strength offered slightly more subtlety and, in my view, a smokier palate. It is matured for 5-8 years in small 100-liter casks, which intensifies the oak interaction, particularly from the ex-port barrels. In character, this single malt, much like the lower-proof Classic Cask, reminds me of mellow Speyside single malts. This is a very enjoyable single malt, and my only reservations are the price and the inconvenient 500ml bottle size. A 700ml bottle would be valued at AUD$360, for which I could purchase numerous Scottish single malts I'd prefer. "Very Good": 86/100 (4 stars)
