This is an exceptional rum. Having sampled numerous pepper-infused spirits over the years, we thought we knew what to anticipate from this one. However, instead of the heat overpowering the rum, it enhances it, providing a warmth without any harsh burn. The initial taste is sweet and rounded, as expected from an aged rum. But, after a few moments, the heat emerges, delivering a warming sensation comparable to fresh ginger. The warmth endures for several minutes but never becomes excessive. This is a perfect rum for cocktail experimentation. From ginger ale highballs to tiki drinks. Consider adding some to your next Piña Colada. Burning Mast pairs wonderfully with pineapple and coconut. Hats off to Kirk & Sweeney for a remarkable product!
