For its Jack Rabbit Gin, Beehive Distilling starts with a grain-neutral spirit. Albanian juniper, orris root, grains of paradise, and coriander are cold-steeped for several hours before the spirit is redistilled. Fresh sage, rose petals, and lemon zest are introduced during the distillation process.

Composed of seven botanicals: juniper, sage, lemon peel, rose hips, grains of paradise, orris root, and coriander. This is among my preferred gins, offering a light yet intricate profile without becoming confused. It's floral without being overwhelming, a beautiful balance.
Notes of sage and juniper, with floral citrus from coriander underneath. A fine demonstration of the local Utah sagebrush in this new American gin. Good juniper and a bit of sage, not overly citrusy.
