Hobart Signature Single Malt

I was meant to join a virtual distillery tour tonight to try six of their current and unreleased spirits. Unfortunately, things got in the way, and I missed the event. However, I'll see what I can do with these six as an amateur. Located in Hobart, Tasmania, this independent, family-owned distillery was established in 2014 and began production in 2015. The distillery has largely gone unnoticed while building up enough stock to meet market demand, a common trend for Tasmanian whisky. Initially sold as single cask batches, the distillery now focuses on more consistent releases. All production is done in-house, with maturation primarily occurring in American oak ex-bourbon casks from the United States. While Apera (Australian Sherry) and fortified wine barrels are frequently used in Australia, Hobart whisky uses ex-bourbon for initial aging, followed by a secondary finish in other barrel types to create what they assert is a unique Australian whisky. Hobart Signature is a blend of select American oak ex-bourbon casks. The goal of the 'signature release' is to consistently achieve the same flavor profile with each bottling, representing the distillery for years to come. Nose: A pleasant autumnal aroma of warm apple turnovers, delicate cinnamon, honeyed malt, and creamy vanilla custard. The cinnamon spice becomes slightly woodier over time. Palate: A rich mouthfeel with oaky malt, almond, and vanilla cream soda. It's exceptionally clean, almost to a fault; the texture is so straightforward it resembles fresh cold water, yet there's a satisfying warmth from the oak spice. Very easy to drink, though admittedly quite plain. Finish: Unexpectedly long, with creamy oak spice and a hint of dried lemon. A developing note of pecan pie and maple syrup also begins to emerge on the nose and palate. Adding a little water brings out some vanilla on the nose but also intensifies the wood spice on the palate, balancing the nuttiness. The finish adopts a slightly younger, grainier texture. I found this disappointing, especially after tasting some uninspired Speyside whiskies. I've generally enjoyed the character of Tasmanian whiskies I've sampled previously. I worry that in aiming for repeatability and accessibility, Hobart has sacrificed some of the potential charm of this otherwise lovely whisky. If the maple syrup pecan notes were more pronounced, its sheer drinkability would make it exceptional. While price doesn't influence my score, at $160, it's not a worthwhile purchase.
