Co. Carlow is home to Flying Tumbler, an independent Irish whiskey bottler established by siblings Patrick Walsh, Thomas Walsh, and Jen McGinnell. They handle the sourcing, maturing, blending, and bottling of their whiskeys. The Bird is an Irish whiskey with no age statement, crafted from a combination of grain and malt whiskeys that matured in ex-bourbon and ex-oloroso sherry casks. It is presented at 43% ABV and became available in the US in April 2022.

Marshall Estevez 4.0

A distinctive, unblended, lighter whiskey aged in bourbon and oloroso casks. It offers subtle notes of citrus and dried fruits, leading to a pleasing but somewhat brief conclusion. The warmth is minimal and not overwhelming; I sampled it neat but might add a little water next time. The aroma is quite distinct, evoking sour cream and chives! It's a bit expensive, but I'll overlook it for an independent bottling. The packaging is appealing, deviating from the standard Irish Whiskey aesthetic, with a bottle design akin to Japanese styles, featuring unique inscribed batch numbers on each unit and its tube. While it might sound odd, a traditional cork closure would be preferable to the screw cap for a purist. It appears this is exclusively available in Ireland, and it's definitely worth seeking out if you have the opportunity. I'd estimate it at 3.5 stars, but I'm feeling generous and have a fondness for independent bottlers. Two more expressions are planned, which I will certainly investigate.
