This tastes complex. You can detect hints of the bourbon barrels it was initially aged in, but the sweetness from the sherry casks used for finishing is also present. There's a bit of spice, but it's not harsh or burning.

About this bottle
While Pearse Lyons Distillery, established in 2017, is located in Dublin's Liberties, the whiskey for this bottling was sourced externally. It underwent four years of aging in former bourbon barrels before blending and an additional four years of maturation in ex-sherry casks.

Excellent mouthfeel, not too thin. Smells of vanilla, the sherry flavor is prominent and quite one-dimensional, but still enjoyable. A nice sharpness at the conclusion.
Heavy on the sweetness. The aroma is dominated by molasses with little else to discern. It's pleasant, but lacks significant depth.
A little spice. Can definitely detect the sherry cask. Nice overall flavor.
Smooth and very sweet, can certainly taste the molasses.
