Tasting neat. Wow, what an aroma. Sweet, pretty, very fruity... like candied mangoes and peaches with a little anise. Rich mouthfeel, agave nectar, tropical fruits, anise, soft black pepper. The finish is sweet, peppery, and slightly tart. Overall, it's quite smooth with just enough bite. The aroma is amazing, and the taste is not far behind. A very 'pretty' tequila with some complexity. My favorite Los Altos blanco so far.

About this bottle
Tequila San Matias Tahona Blanco, released in September 2016, is the brand's inaugural tequila produced entirely using the tahona method. This process involves using a large stone wheel, the tahona, to gently crush the agave piñas after they have been slow-cooked for 48 hours in brick ovens. The resulting juice is fermented in pine vats and then double-distilled in copper pot-stills. This unaged tequila is bottled at 40% ABV.

I don't often drink blancos, but I received a complimentary sample of this and thoroughly enjoyed it. It's a fantastic blend of sweet, spicy, vegetal, and briny olive agave flavors, with a creamy texture and a lengthy finish.
This is where exceptional Tequila begins. It's excellent. I appreciate the resumption of Tahona production and hope others will follow.
Why does it have an oily taste?! It's an unpleasant texture; it's not that smooth.
