Aurelio Gonzalez Tobon crafts Del Maguey Papalote de Puebla Mezcal in Mexico's state of Puebla. The papalote maguey requires 12 to 18 years to mature. After harvesting, the piñas are roasted in the earth for three to five days. A horse-powered mill is used to press the juices, which then undergo natural fermentation in an oak vat for six to nine days. Distillation occurs only once through copper plates in a reflux-style alembic still. It is bottled at 47% ABV.
