This intense Tequila from Jalisco (Los Altos Southern), Mexico, was cooked in an autoclave, fermented in stainless steel, and twice distilled in copper pot stills before a 9-month rest in ex-whisky oak. Its aroma opens with agave, fruit, earth, and spice. The middle brings honey, red apple, green pepper, and cedar. It finishes smoothly with moderate length. January 2020.
