About this bottle

Chic Choc Rum, from Domaine Pinnacle's orchard and distillery in Quebec's Eastern Townships, is a new addition to their small-batch spirits. Its name is inspired by the Chic Choc Mountains, where the six-spice blend is sourced: peppery green alder, pine forest spikenard, whiterod berries, lovage root, sweet gale seeds, and wild angelica. This rum is unique as an artisanal offering utilizing Nordic spices grown in Quebec.

Appearance: Mostly clear, viscous, with many thin, slow-moving legs. Aroma: Cinnamon, mashed banana, applesauce, brown sugar, subtle vanilla, marzipan, peppery, wildflowers, cola, dark cherries, grassy, smoked maple. Palate: Medium body, medium-high alcohol, a tingly acidity, bitterness, sweetness, fruity pepper, cola, caramelized maple syrup, black cherry jam, blue grapes, wildflowers, candied banana, applesauce, baking spices, medicinal/herbal notes. Finish: A pleasant to tolerable burn, smooth and spicy conclusion, herbal (gin-like) with some sweet cola lingering. Overall: Sweet, herbal, and spicy. A nice take on spiced rum, with an enjoyable interplay of botanicals and spices. The mouthfeel is pleasant with layered tastes. The spirit shifts between being an herbal, gin-like spiced rum and a fruity, baking-spice-forward one, but it does so gracefully. Best suited for cocktails with a mixer like ginger ale.

The distiller's description captures it well. It's peppery with notes of rich brown sugar/maple syrup, baking spices, and a subtle hint of gin botanicals. This isn't a typical spiced rum, which is a positive. It costs $32 in Ontario.
