Pechuga mezcal offers an intriguing experience. It's a customary mezcal produced during the harvest season. Initially double-distilled like all mezcals, it undergoes an additional distillation with a piece of poultry breast suspended above the vat. The poultry's essence softens and balances the spirit's fruity qualities. One distillation stage incorporates local harvest ingredients, varying by region and crop. This results in an amazing blend of traditional techniques, fruit infusion, and poultry essence. As unusual as it seems, it's remarkably effective and genuinely good. I opened this bottle over Thanksgiving for guests, and it was a massive success. We had seasoned scotch aficionados, wine lovers, and beer experts, and this was the one spirit everyone seemed to appreciate universally. While I haven't sampled many mezcals, this stands out as the finest and most memorable I've encountered. The liquid is crystal clear. The aromas are fruity, reminiscent of ripe peaches and honeydew. The flavor profile is astonishingly intricate; I detected more melons and pears, alongside a mineral earthiness, almost like umami, specifically like mushrooms. It's very well-balanced and deeply complex. This isn't intended for casual drinking but rather for savoring with close friends and family during special moments. Highly recommended!

Smooth tastes of sage, hoja, and some fruity notes. Really enjoyable with a light smokiness
