Blackadder Blair Athol 1989 (29 years) 53.2% Finished in sherry casks for over 3 years after bourbon cask aging. Nose: Damp wood, refreshing mint, freshly cut grass, a light sherry cask finish, like walking through a pine forest on a damp day after rain. Taste: Spiciness emerges slowly, with bourbon fruitiness. Exhaling brings out bourbon as the main flavor, but sweet sherry notes appear. A hint of honey tries to emerge, then shifts back to herbal and grassy notes. Finish: A slight alcohol presence and a somewhat disappointing finish. The character doesn't quite match the 29 years of aging. #Tried to create unique aromas and flavors, but the finish fell short. #But raw beans are eternal.
