In 1949, a gentleman married a lady, and in the same year, he achieved another milestone: acquiring his father-in-law's still. This partnership led to the establishment of a Cachaça producer in the city of Luiz Alves, state of Santa Catarina, with a designation of origin for cachaça. Initially, the family cultivated their own sugarcane, grinding it for supplies. Later, molasses was brought by cart from neighboring areas by settlers for production. The small business expanded, allowing for the purchase of machinery to boost output and meet regional demand. Generally, the cachaça ages for 2 to 35 years in oak barrels, imparting unique flavors and refinement. Currently, with over 70 types, they offer high-quality, handmade beverages using selected raw materials and boasting a 75-year tradition. There's limited information about this particular Cachaça and the producer's website offers little clarification. According to Brazilian law, a cachaça must be aged for at least 1 year in a wooden barrel to be called "premium," so this distillate has aged for at least that duration in an oak barrel. This Cachaça has earned numerous awards in spirits competitions and appears to be a special edition sold upon request. The producer refers to it as "35 years" but doesn't elaborate on its meaning. Tasting notes include: caramel color, aromatic, toffee, vanilla, dried fruits, almonds, integrated oak, and a long finish. Information sourced from the Cachaça producer's website.
