Adão Cellia and Maria Isabel de Moraes oversee the creation of 20,000 liters per harvest. Sugarcane varieties RB7515 and RB5453 are cultivated, along with a small batch of Cana Caiana, resulting in a limited annual production of 2,000 bottles. Manual harvesting, without burning and with juice extraction within twelve hours, follows best practices. Selected commercial yeasts are used for fermentation. Post-distillation, the cachaças mature in jequitibá-rosa, American oak, European oak, balsam, and jackfruit vats. With guidance from chemist and cellar master Leandro Marelli, the cachaça distinguishes itself with intriguing blends from jackfruit, a wood less common in the market. Cachaça Princesa Isabel Mãe Santa Grápia 700ml is aged for one year in Grápia vats, an exotic South American wood abundant in the Amazon and southern regions of the country. This 40% alcohol spirit is the brand's first to utilize first-use Grápia barrels, yielding an unparalleled cachaça with a striking color and flavor.
