Noé Santiago Soares was born in 1939 on the Águas Belas farm, situated at the base of the Serra dos Bois in the rural area of Salinas, a city in Minas Gerais renowned for its Cachaça production. He became a distiller at a young age, following his uncle Anísio Santiago, and produced the well-known Cachaça Havana, learning the secrets of quality Cachaça from the master distiller. In 1988, he introduced his own brand, Cachaça Canarinha, to the market, achieving immediate success and remaining a highly regarded spirit to this day. Noé passed away in 2008 at the age of 69, entrusting his legacy to his family. Cachaça Canarinha 600ml is aged for three years in balsam barrels before being bottled in standard beer bottles. This robust spirit has an ABV of 44% and is recognized as one of the finest distilled Cachaças from Minas Gerais. The producer's background and surname lend significant credibility. It is made by Noé Santiago Soares, nephew of Anísio Santiago, the maker of the renowned Cachaça Havana, from whom he inherited the expertise for producing a quality distillate. It has a yellowish hue and a subtly spicy, herbal flavor. The balanced acidity, fruity taste, and aromas of fennel and grass are key tasting elements. Source: Cachaçaria Nacional.
