This property, situated by the Extrema River north of Formosa in Goiás, continues a family tradition of land cultivation. The desire to create Cachaça Caialua led to the start of work in 2009, involving sugarcane fields, construction, equipment, and product research. The first cachaça was produced in 2012. Harvesting is done manually, with sugarcane foliage and bagasse used for animal feed. Cooling water from distillation is returned to waterways, and vinasse serves as fertilizer for the sugarcane fields. Cachaça Caialua Extra Premium Single Barrel 5 Years Old 700ml is a limited, numbered commemorative edition called José Saraiva, aged five years in American oak barrels.
