Along with rabbit breast, this spirit uses local apples in its distillation, creating a fruity, meaty character reminiscent of mincemeat pie. The smokiness persists, but combined with the apple and rabbit, it feels quite festive and somewhat old-fashioned. This is a traditional spirit style that's very difficult to find outside of local villages in Mexico. We commend this producer for making this well-made and uncommon mezcal accessible to a broader audience.

Bosscal Mezcal Pechuga De Conejo is a delicate, limited production, Mountain to Market Agave Spirit, from Bosscal Distillery NOM-D248G in Durango, Mexico. It's made with wild agave & local apple; the vapors pass through a suspended, skinless rabbit during the third distillation. It has a delicate beginning with hints of agave, citrus, stone fruits, stewed meat; a fresh development adds hints of blood orange, apple, mandarin, apricot, plum & quince; leading to a balanced, medium-length finish with hints of stewed fruits.
Silky smooth, with no harshness at all. The flavor profile is mild.
