About this bottle

Bainbridge Distillery claims to have produced the first American whiskey aged in Japanese oak, known as "Mizunara" (Quercus crispula), a species distinct from American (Quercus alba) or European (Quercus robar) oak. The whiskey is a single grain made from organic unmalted barley from Washington's Skagit Valley and fermented with a Scottish yeast strain. The casks are sourced from Japan's Hokkaido island, where the oak is harvested, shaped, and seasoned. Its name derives from Yama, a village on Bainbridge Island founded by Japanese immigrants in the 1880s. Proceeds from this whiskey's sale will support preservation efforts for the historic site, the last undisturbed village established by first-generation Japanese-Americans. It was released in Spring 2016 and bottled at 45% ABV.

Very light aroma, smells like banana bread and waffle cone. Amazing flavor, the burn and the wood complement each other well. Lighter wood, tastes very high proof, but some of that bakery flavor is on the tail, which is longer than expected from the medium body. Clear and intriguing flavors.

Lacking some character at the start, yet it leaves a satisfying, lingering aftertaste. It's not the typical rye experience, but I enjoyed it.
